The food Japan calls Nattō
Long before the West discovered nattokinase in a lab, the people of Japan already knew what it did. They ate fermented soybeans wrapped in rice straw every morning. They lived longer than almost anyone else on earth. Populations that consume nattō regularly have 25% lower cardiovascular mortality. Not slightly lower. A quarter.
In 1987, a researcher named Dr. Hiroyuki Sumi dropped nattō onto a fibrin plate in his lab and watched it dissolve a blood clot in 18 hours. No drug. No heat. Just the enzyme inside the food. He called it nattokinase. Three decades of published research followed.
